honey joy to the world

I didn't know these are known as honey joys until I came across an Australian's Women Weekly cookbook.


These honey coated cornflakes cookies or honey joys are a familiar treat during the Chinese new year. I have been looking for its recipe so that I can make them anytime of the year. It was by chance that I stumbled upon a recipe that seems close enough to the store bought ones. Besides cornflakes, the extra almond and sesame seeds greatly enhance palatability and flavour of these buttery sweet snacks, making them a real crunchy and joyful treat for anyone, on any occasion.


As the Christmas season is upon us, may simple joys and little pleasures like these honey joys bring sweet memories of the past year, and may your year ahead be sprinkled with joy and happiness!

Honey Joys


Ingredients:

60g unsalted butter
50g honey
1 tablespoon granulated sugar
1/4 teaspoon salt
100g corn flakes
100g almond flakes, lightly toasted
3 tablespoons white sesame seeds, lightly toasted



Method:
  1. Place corn flakes, almond, sesame seeds in a big mixing bowl.
  2. Melt butter, honey, sugar and salt in a saucepan, stir to combine. Remove from heat and pour mixture over the corn flakes, almond and sesame seeds. Keep mixing with a spoon until evenly coated.
  3. Spoon cornflake mixture into mini paper case and bake on baking tray at 150°C for 12-15 minutes until golden. Cool completely, store in airtight container.

Honey Joy, what a nice name. I made that before but it is very sticky after baking and sticks badly to the paper cases. I was wondering, all the ingredients are cooked, so why is there a need to bake again? Any idea? The cornflakes are crispy too even without baking mah....

Yours look great, and this time if I can find the time I think I give this recipe a try. Wonder of the kids will like it as there are two ingredients they don't like inside - almond and sesame.

Sherlyn, the ones I made doesn't stick to the paper cases, not sticky at all. Maybe it is the amount of honey used? I have the same question about baking it since all are already 'cooked'. But I think, not sure whether I am correct, the baking helps to 'bind' the cornflake cluster together. You can omit almond and sesame if your kids don't like, can add those colourful chocolate rice or colourful sprinkles instead. but for me, I really like the combo of almonds and sesame, 很香 :)

Hi Erina, I store them in air tight containers, can keep up to 1 week. If they turn soggy, u can put it in the oven to heat, the cornflakes will turn crisp again.

Thanks!! And I did this recipe, it was great fun with my little nephews :)

I stored them in my Lock & Lock after they were left to cool at room temperature. However the next day, the honey joys fell apart, instead of how they clumped together when cooled :( I'm not sure what happened though, but I'll still do more of these anyway, haha. Much appreciation for your recipe!

Hi erina, some cornflakes will fall apart, but I made mine very small, so I didn't have problem with it since it is one mouth each ;)

Hi Eileen, I used mini paper liners, I made about 70-80 in a batch.

Why do you need unsalted butter if salt is added anyways to the mix, can I just use salted butter instead of adding salt ?

Hi, I am not able to answer your question...most baking recipes call for unsalted butter and some recipes would add salt even when unsalted butter is used. You can of course use salted butter.

Blessed Lunar new year to you and family. I tried sending you an email earlier. I did this for CNY - some batches turned our well but some got stuck to the liners. Do you know why? Under-baked or over-baked? Overall it was good - just curious to know why some stuck to the liners. Thought I could get a quick ansswer from seasoned bakers. Thanks very much for sharing.
